The forests are alive with delicious fungi! The time to start placing orders is NOW!

Yesterday, the Fall Mushrooms Team set forth into the forests and returned with a sizable bounty. It's time to place orders for the Chanterelles and the more elusive - White Chanterelles! Since some folks don't know how to prepare mushrooms, here is a simple recipe for a delicious Mushroom Sweet Potato Casserole that will certainly wet your appetite:

Mushroom Sweet Potato Casserole

2 sweet potatoes
2 yams
1 cup of hot milk
1 tablespoon cornstarch
2 eggs, slightly beaten
1 tablespoon sherry flavoring or 2 tablespoons sherry
1 teaspoon vanilla
2 tablespoons sugar
1/2 cube butter, melted
1 cup sautéed chanterelles, chopped fine

Boil sweet potatoes and yams with jackets on in salted water. Peel and mash.

Add about 1 cup milk slowly until reaches a thick batter consistency.

Dissolve 1 tablespoon cornstarch in a little milk and add to potatoes. Add eggs, sherry flavoring, vanilla, sugar and butter. Blend well. Add chanterelles and stir in.

Bake in greased casserole for 1 hour.

Recon mission: Early and promising signs

While on an early recon mission, the FallMushrooms team found some great news close to the ground: baby chanterelles. The team followed an elk that seemed to point towards a clearing.
